Chickpea Quinoa Avocado Salad
This salad is extremely refreshing for the summer and is absolutely delicious! I make it all the time and it is one of my favourite salad recipes. Some people, like myself, love fruit in my salad and others do not. Strawberries and mandarin oranges are optional in this recipe and it tastes delicious either way!
2 handfuls mixed greens soaked
1/2 can soaked chickpeas
1/2 chopped cucumber
6 strawberries sliced in half(optional)
1 can mandarin oranges(optional)
2 handfuls of mixed nuts(optional)
1/2 cup cooked quinoa
1 handful shredded daiya cheese
2 tablespoons of olive oil
First thing you want to do is soak your chickpeas overnight. Soaking breaks down the beans protective barrier and makes it easier on digestion. If you want to make it later on in the day, you can soak for a few hours in the morning. I like to use a tablespoon of apple cider vinegar in the water I am soaking them in to help pull out the lectins and again makes it easier to digest.
Cook a 1/2 cup of quinoa on the stove by following the directions on the package.
Soak 2 handfuls of mixed greens in water(wash well!) and let dry. Set aside in a large bowl.
In another bowl, add your chickpeas, cucumber, strawberries, mandarin oranges, and avocado. Put a drizzle of olive oil and sea salt over them.
Once your quinoa is ready add it to the bowl of mixed greens. Then you add the other bowl of ingredients to this mixture and toss. Add a handful of daiya cheese over top. Add some more olive oil and salt and voila! Simple and easy and very satisfying.
